A small and juicy cake for sharing. Here's my recipe for Chocolate Cake with Strawberries.
YOU WILL NEED
- 8 medjool dates
- 1 teaspoon coconut oil
- 90g Brazil nuts
- 40g raw cocoa powder
- 3 strawberries
- 1 strawberry
HOW TO MAKE THE CHOCOLATE CAKE WITH STRAWBERRIES
Grind the Brazil nuts to a fine flour in a coffee grinder or food processor. Remove the stones from the dates and knead them to a soft paste.
Add coconut oil, Brazil nut flour and raw cocoa powder and knead to an even paste.
Divide the mixture into two portions and shape into two small round cakes. You could use a mousse ring to keep the shape.
Chop the strawberries finely and pile over one chocolate base. Place the other chocolate cake as a lid over the strawberries.
Leave the cake in the freezer for approx. 30 minutes until set well enough to stand on its own.
Decorate with strawberries and serve.
