N'Ice Cream Strawberries is a light ice cream which is very quick to make as soon as the craving for ice cream crops up.  Always make sure that you have frozen berries in the freezer so you will always be able to make this juicy delicacy in moments.

Serves 3

YOU WILL NEED

  • 250 g frozen strawberries
  • 2 bananas
  • 2 teaspoons sunflower lecithin

How to make the N'Ice Cream Strawberries

Blend strawberries, bananas and sunflower lecithin to a cream and keep in the freezer. Serve with fruit, fresh berries, sprinkles or raw cocoa nibs.

ABOUT SUNFLOWER LECITHIN

Lecithin is available as a food supplement, because it has so many beneficial properties.

Lecithin is extracted from soya beans or sunflower seeds. I always use sunflower lecithin because it is liquid and easier to work with. 

Lecithin is a phosphorous lipid which is the main part of cell walls and other biological membranes, and which are found everywhere in living organisms. 

A large part of the phosphorous lipids in lecithin is phosphatidylcholine, which contains the chemical group choline. Choline is also found in neurotransmitter acetylcholine, and phosphatidylcholine has been used in neurological research.

It is especially important for children and pregnant women to take sufficient amounts of lecithin.

Lecithin is thought to have a number of beneficial health related properties, for example it improves memory, the uptake of vitamins (A and B1), counteracts hardening of the arteries, has a beneficial effect on the liver and regulates a high cholesterol level. 

And then sunflower lecithin adds a delicious taste of cream to cakes and desserts.
