Delicious pancakes with spinach!
For 4 people
YOU WILL NEED
- 4 large eggs
- 1 dl grated zucchini
- 4 dl spinach (parsley or other leafy green)
- A pinch of Himalayan salt
- 1 dl soaked and boiled chickpeas (or chickpeas from glass)
- Coconut oil for frying
HOW TO PREPARE SPINACH PANCAKES
Blend eggs, spinach, salt and chickpeas into a dough with a handblender and stir with the grated zucchini. If you are in a hurry, the courgette can be blended instead of grated.
Stir on a frying pan like pancakes and serve with a spicy homemade mayonnaise and lots of green.
Serve with a protein source (egg, fish, poultry) or 4 tablespoons of hemp seed.
Vegan version
- 1 can of chickpeas including water
- 1 tbsp Psyllium Husk (psyllium seed shell)
- A pinch of Himalayan salt
- 3 dl spinach
HOW TO PREPARE THE VEGAN VERSION OF THE SPINACH PANCAKES
Blend all the ingredients and sprinkle on the forehead in coconut oil as small thick pancakes.
